Garnish:
1/4 cup chopped fresh cilantro (coriander)
1/4 cup chopped fresh parsley Lemon wedges
Rinse the soaked chickpeas and place them in a large soup pot. Add the red lentils, chopped onion, celery, carrots, and minced garlic. Pour in the diced tomatoes, tomato paste, chopped cilantro, chopped parsley, ground turmeric, ground ginger, ground cinnamon, ground cumin, ground coriander, cayenne pepper, salt, and pepper. Add the vegetable or chicken broth to the pot, ensuring that all ingredients are well submerged. Drizzle olive oil over the soup mixture and stir to combine. Bring the soup to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1 to 1.5 hours, or until the chickpeas are tender. Taste the soup and adjust the seasoning if necessary. If the soup is too thick, you can add more broth to achieve your desired consistency.
Just before serving, stir in additional chopped cilantro and parsley for a fresh burst of flavor. Ladle the Moroccan soup into bowls and serve with lemon wedges on the side.
